Simple Nourishing Meals: Sweet + Savory Sheet Pan Salmon

One Pan, One Delicious + Healthy Meal

Healthy eating doesn't have to be complicated or require hours in the kitchen. Sometimes the simplest meals are the most satisfying! This sheet pan salmon dinner combines protein, colorful vegetables, and healthy fats into one delicious meal with minimal preparation and cleanup. Best of all, you can easily substitute your favorite vegetables or use whatever you happen to have on hand.

Servings: 2
Prep Time: 15 minutes
Cook Time: Approximately 35 minutes
Oven Temperature: 400°F

Ingredients

  • 2 medium sweet potatoes, peeled and cut into bite-sized pieces (or your favorite potatoes)

  • ½ pound cauliflower florets, cut into bite sized pieces

  • 10 oz. cherry tomatoes, halved

  • 2 salmon fillets (5 oz. each)

  • 3 tablespoons olive oil, divided

  • 1 teaspoon salt, divided

  • ½ teaspoon black pepper, divided

  • ¼ cup pure maple syrup

  • 1 tablespoon Dijon mustard

  • Fresh parsley for garnish

Let's Get Cooking!

1. Prepare your potatoes.
Preheat the oven to 400°F and line a large, rimmed baking sheet (approximately 13 × 18 inches) with parchment paper. Toss the sweet potatoes with 2 tablespoons of olive oil and some salt and pepper. Spread evenly on the baking sheet and roast for approximately 20 minutes, or until they begin to soften and brown slightly.

2. Prepare the salmon and glaze.
While the potatoes are roasting, season the salmon fillets with salt and pepper. In a small bowl, whisk together the maple syrup and Dijon mustard until well combined. Set aside.

3. Season your vegetables.
In a separate bowl, toss the cauliflower and cherry tomatoes with the remaining tablespoon of olive oil and the remaining salt and pepper.

4. Assemble your sheet pan.
Remove the potatoes from the oven and move them to one-third of the baking sheet. Arrange the cauliflower and tomatoes in the center and place the salmon fillets on the remaining third. Brush the salmon with the maple-Dijon glaze.

5. Roast and enjoy!
Return the baking sheet to the oven and roast for an additional 12–15 minutes, or until the vegetables are tender and the salmon flakes easily with a fork.

6. Garnish and serve.
Sprinkle with fresh parsley and serve warm!

Make It Your Own!

One of the best things about this recipe is its flexibility. Feel free to substitute any vegetables you enjoy or have available. Broccoli, Brussels sprouts, asparagus, zucchini, bell peppers, and carrots are all wonderful options. Just remember that harder vegetables, like carrots and potatoes, need more roasting time, while softer vegetables, like zucchini and asparagus, cook more quickly. Adjust the timing accordingly.

A Little Wellness Wisdom

I love meals that make healthy eating simple and achievable. Salmon provides protein and heart-healthy omega-3 fatty acids, sweet potatoes offer fiber and complex carbohydrates, and colorful vegetables bring a variety of vitamins, minerals, and antioxidants to the table.

And let's not forget another benefit: less time preparing meals and cleaning up means more time for something you enjoy! Taking care of ourselves doesn't always require big changes or complicated routines. Sometimes it's as simple as preparing a nourishing meal that tastes good and fits into our lives.

Remember, healthy habits don't have to be complicated to make a difference!
