Simple, nourishing meals: Watermelon, arugula, feta + mint salad

Serves 4

Ingredients

  • 4 cups seedless watermelon, cut into bite-sized cubes 

  • 4 cups baby arugula 

  • ½ cup crumbled feta cheese 

  • ¼ cup fresh mint leaves, torn or thinly sliced 

  • 2 tablespoons balsamic glaze 

  • Freshly ground black pepper, to taste 

Instructions

  1. In a large bowl, combine the watermelon, arugula, feta, and mint. 

  2. Gently toss until evenly mixed. 

  3. Transfer to a serving bowl or platter. 

  4. Drizzle with the balsamic glaze just before serving. 

  5. Finish with freshly ground black pepper, if desired. 

Tips for Success

  • Add the balsamic glaze right before serving so the arugula stays crisp. 

  • If making ahead, combine the arugula, feta, and mint first. Add the watermelon and balsamic glaze just before serving. 

  • Serve chilled for the most refreshing flavor.
