Ingredients
4 cups seedless watermelon, cut into bite-sized cubes
4 cups baby arugula
½ cup crumbled feta cheese
¼ cup fresh mint leaves, torn or thinly sliced
2 tablespoons balsamic glaze
Freshly ground black pepper, to taste
Instructions
In a large bowl, combine the watermelon, arugula, feta, and mint.
Gently toss until evenly mixed.
Transfer to a serving bowl or platter.
Drizzle with the balsamic glaze just before serving.
Finish with freshly ground black pepper, if desired.
