Simple, nourishing meals: Easy chicken stir fry

Ingredients

Protein & Vegetables

  • 1 lb. chicken breast, cut into bite‑sized pieces

  • 2–3 medium carrots, sliced

  • 3–4 celery stalks, sliced

  • 1 medium bell pepper, sliced into strips

  • 1 medium onion, sliced or diced

  • 1 (12 oz) bag of snow peas

  • 1 small can water chestnuts, drained

  • 3 tbsp avocado oil

Stir Fry Sauce

  • ¼ cup soy sauce

  • ¼ cup honey

  • 1 tbsp rice vinegar

  • 1 tbsp minced garlic

  • 1 tsp sesame oil

  • Red pepper flakes to taste (optional, for a little heat)

Instructions

  1. Make the sauce
    In a small blender or mixing bowl, combine soy sauce, honey, rice vinegar, garlic, sesame oil, and red pepper flakes (if using). Blend or whisk until well combined. Set aside.

  2. Cook the chicken
    Heat a large sauté or stir‑fry pan over medium‑high heat and add 2 tablespoons of avocado oil. Add the chicken and cook until no longer pink, about 5–7 minutes. Remove from the pan and set aside.

  3. Stir fry the vegetables
    Add the remaining tablespoon of oil to the pan. Add carrots, celery, onion, and bell pepper. Stir fry for several minutes until vegetables are tender‑crisp.

  4. Add remaining vegetables
    Add the snow peas and water chestnuts. Continue stir frying for another 2–3 minutes.

  5. Combine everything
    Return the cooked chicken to the pan. Pour the sauce over the mixture and stir well. Allow everything to cook together for 2–3 minutes so the sauce thickens slightly and coats the ingredients.

  6. Serve
    Serve warm over rice, quinoa, cauliflower rice, or enjoy it on its own for a lighter option.
